Even though it seems like we eat so many bananas with the heat they ripen so fast. Had 3 leftover before Robert went and bought more....put them in the oven to dehydrate. Found this great recipe "Raw Banana Bread Breakfast Bars" so simple if you have a food processor and i can't even imagine not having one.

Here's the recipe~

3 bananas dried
1 1/2 cup pecans
4 large madjool dates or more :) pitted
2 cups rolled oats- the old fashioned kind
1/2 cup pecans

Slice the bananas 1/4 " thick hydrate in oven for 2-3 hours. Once bananas are dried but still bendable remove. In food processor mix together dried bananas, 1 1/2 cup pecans, dates until it forms a paste. Add oats & remaining pecans  blend until well combined. Place dough on wax paper press out or use a rolling pin with another piece of wax paper on the top, to about 1/2 " thick forming a square. Cut into equal pieces and wrap each one in saran wrap - store in frig up to a week.

variations:
add blueberry/dried cherries
add dark chocolate & coconut
add dried apricots

                                   So simple satisfies the sweet tooth !
